Do civil engineering and sake go together? At this event, they do. Taste a range of aged sake — known as koshu — matured in dams.
What to expect
Aged sake doesn’t command quite the same audience as wine, but more and more breweries are experimenting with it. With time, sharp edges are rounded off and the rice-based elixir develops notes of caramel, dried fruit, chocolate and more.
At this sake festival, 13 breweries from Aichi and Gifu — part of the Tōkai region, known for its rich culture of fermentation — team up with four local dams to present a selection of aged sake. Employing the cool, stable environment inside dam facilities as natural cellars, these special brews have been aged for up to two years. There will also be food and dam-related exhibits to peruse.
